#NoNakedChicken–Cover your thighs & breast… with President’s Choice Sauces

Do you cover your breast & thighs?  Now that’s an interesting question!!! Get your mind out of the gutter people this is a family friendly blog after all.  We are talking about CHICKEN!  We love eating chicken in our house that happens about 2-3 times a week.  This means that you have to be creative to make sure that the kids don’t get board. Roasted, stewed, barbequed, fried, baked… you name it, it has happened to a chicken in our kitchen.

One of my favourite ways of ‘covering up’ is with President Choice’s Blue Menu sauces.  President Choice is the in-store brand from Loblaw stores . This particular line provides popular food options (sauces, frozen foods, dairy, can goods) containing less fat, less sodium, more fibre and more Omega-3.   Unlike others ‘calorie-wise’ brands that we’ve tried, we have always found the Blue Menu products much tastier… and to be honest, if they don’t like and your kids don’t eat it, what good is it…right?

We made the Red Curry Cooking Sauce with 50% less Fat and 45% less sodium (when you think of it, it is unbelievable that you can make a product with such huge reduction and not effect the taste.  Honestly, these Blue menu sauces are REALLY tasty!)

We usually get a large package of chicken because we love leftovers. Skinless, boneless makes live way easier to cook with so that tends to be our favourite.

1. I then cut it up in to large pieces and then fry them in 1 tablespoon of canola oil.   After you fry the chicken remember to drain the excess liquid because once you add the sauce and the veggies, it will be too soupy.

2.  Next we tackle the veggies: slice one red pepper into thin pieces.  I  used fresh red peppers but you can also use frozen veggies.  It’s up to you!

I discovered Europe’s Best Zen Garden frozen vegetables and find that this really goes well with the Red Curry Sauce.  You just have to saute them and drain all the liquid then add them to the chicken at the last moment or you will overcook them.  That particular evening, we had them as a side dish.

3. After letting the chicken simmer and the fresh red peppers cook, you come out with a healthy, flavourful meal that is also good for you!

4. Last but not least, bake some Naan bread and be sure to mop up all the sauce as you enjoy the best (and easiest) Red Curry Chicken.
