As part of my GETTING BACK TO ROUTINES (or organizing my life again) movement this fall, I feel that I need to get back to menu planning Monday. I always have a least one Crock Pot recipe (it is usually two). So on my quest to be a better mother…or should I say a nurturing cook…{that may be a bit of a stretch}… I tried my hand at ‘winging-it’ with the NEW “Recipe Inspirations” lines from Club House. I used the pre-measured Garlic Lime Chicken Fajitas mix . My first foray into this line was about a while ago and I decided that I needed to ‘experiment’ with this particular seasoning in a Crock Pot. Club house has a limited choice of crock pot or slow cooker seasoning packets so I had to improvise because I did not have an alternative seasoning package for chicken. I have I have since found that they have any less options on the market. The good news is I have kept most of the recipes from the packages for reference. You see you can use the measurements on the packages without having to re-purchase each one.
We have a few family favourites that we really love: Garlic Lime Chicken Fajitas, Mexican Lasagne and our ultimate favourite the Asian Sesame Salmon.
Here’s the deal…my kids are convinced I am a good cook. I am not sure where they got that idea. I don’t think I am very creative…well, not in a good culinary way…but apparently, they are willing to go with it. The ‘rub’ is I often use help to make things taste better, I don’t make those tasty choices by myself.
Last week, I had chicken drumsticks but needed a Crock Pot recipe because I was pretty busy working and I didn’t have the time to babysit my culinary creation. I decide that I was going to combine chicken, the Club House seasoning package, plus some stewed tomatoes and then throw it all together into the Crock Pot. The reason I like this particular package (Chicken Lime Fajitas) is because the spices are already measured out plus the recipe is on the back of the package. If, however, you don’t have the pre-measured packages available you can also use the following measurements to season (see below). Adding fresh ingredients (see below) just seals the deal!
What you need:
- 2 tablespoons of olive oil
- 1 teaspoon ground cumin
- 1 teaspoon dried garlic
- 1 teaspoon dried onions
- 1 teaspoon dried oregano
- 1 teaspoon dried cilantro (if using fresh, add at the end of cooking)
- 3 tablespoons lime juice
- 3 tablespoons orange juice (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1.5 lbs. boneless skinless chicken breasts
- 1 – 14 oz. can of diced plum tomatoes
