This year I am participating in a Christmas Cookie Exchange. Have you ever done one of those? It is great fun and you really should try it. There is minimal work (well, minimal if you convince your daughter and her friends to do the baking) but you get to exchange for even better cookies. This year we tried a Red Velvet Cookie recipe that we found in the Food Network Canada magazine. I would love to tell you they were out of this world and absolutely the best cookies we have ever made but I would be lying. Though they look rather appealing, we found them to be quite boring and bland. They were also a tad hard.

If you can imagine what it is like going to a Cookie Exchange when you know that the 12 or 13 other women there will have baked some pretty amazing things. There is Jacqui’s famous fudge, Pam’s Butter Tart squares and of course Vesna will make something scrumptious and exotic with almonds and nugget. Who in the world makes home made nugget??? My friends do. This year, there were also chocolate truffles (to die for), oatmeal and gum drop cookies (yes, gum drops not raisins), classic gingerbread cookies. Not one cookie was bad and many, many were really, really good. Ours ‘looked’ good but…
I HATE BAKING… Honestly, I am not very good at it and I even seemed to screw up the picking of the recipe for this year’s exchange.
Clearly what I should have done was bought a half doze bags of Pamela’s Gluten Free Sugar Cookies and called it a success. I love, love, love these Sugar Cookies that I received as part of The Healthy Shopper 2014 Fall picks. They were very easy to make and were absolutely scrumptious.
When you use fresh ingredients you are bound to get the best results. Eggs and good butter at room temperature will make the perfect cookie but to be able to produce this special cookie with Gluten Free flour is THE BEST!
No compromise on taste or texture of the cookie. They turned out so well, I have to say I feel like we have redeemed ourselves with this wonderful choice.
